Beautiful brilliant and deep robe, golden yellow with green reflections. Pleasant nose, with subtle aromas of dried flowers (lime blossom, white lilac) and ripe white flesh fruits (peach, pear). Characterized by a beautiful structure at the attack (freshness and roundness), this Grand Cru Les Clos develops delicate aromas of small fried fruits, white peach and fine spices on the finish.
Winemaking
Fermentation in oak barrels aged 2 to 3 years. The wine is then racked to remove fermentation lees. The maturing phase then begins, which will last from 12 to 18 months depending on the vintage. A light bentonite fining will then be applied to remove the proteins from the wine. Finally, a gentle filtration before bottling will clarify it in a natural way. Aging 8 to 10 years
Story
Chablis Grand Cru is located on the right bank of the Serein (river that crosses the vineyard), in the northeast of the city, between 100 and 250 meters above the sea level. The Chablis Grand Cru appellation is unique, divided into 7 climates. Soil composed of calcareous marl, very rich in tiny fossil oysters (Exogyra virgula).
The land dates back to the Upper Jurassic, formed 150 million years ago. This is the largest and most famous Grand Cru; its fame based on its history as one of the Chablis’ first vineyards. The appellation enjoys a southerly aspect with a very white, dense and dee clay soil.
