Winemaking
The grapes are harvested when they reach good maturity. After the first fermentation, the assembly takes place according to the Ackerman style, under the watchful eye of our Cellar Master. Then begins the traditional method characterized by a second fermentation in the bottle, with a slow development during aging in our cellars. When bottling, a liqueur based on cane sugar and yeast is added, which causes the second fermentation. The bottles are placed horizontally on thin, well-aligned slats. They will thus remain immobile for several months. When the wines begin to ripen and acquire perfect clarity, the riddling period begins, it will last approximately two months. Finally the deposit is lowered towards the stopper, (the bottle is then vertical), we proceed to its expulsion by disgorging. "Shipping liquor" is then added, (the latter will determine the brut and semi-dry), then the bottle is then capped and dressed. Produced from a particular terroir, Crémant de Loire Cuvée Privée Rosé Brut is both a distinguished wine with a marked personality, and a wine of character, linked to its original terroir. On the palate it shows a rich, enveloped structure and ends with a mineral flavor.
