With the intense purple colour of the twilight sky, sometimes veering towards mauve, your Nuits-Saint-Georges exhales notes of cherry, strawberry and blackcurrant. Macerated fruit such as prune complete the aromatic palette that evolves towards notes of leather, truffle, fur and game. Assertive and robust, it has good body and texture within a finely balanced, solid structure and excellent length. It will appreciate several years cellaring, with maturity allowing the wine to mellow with sensuality and refinement. Vibrant and powerful, it gives the Côte de Nuits all its nobility and character. It is the most natural pairing in the world for hearty, full flavoured meat dishes such as roast lamb, roast beef, or duck breast, just as game will be a particularly good match for some of the more feral aromas that emerge with ageing. Gourmets will also enjoy it with certain fish dishes such as a ragout of carp in red wine. Not forgetting soft washed-rind cheeses such as an Epoisses, a Langres or a Soumaintrain.
