Winemaking
After manual harvesting, the grapes undergo cold static decantation only by light pressing and cleaning of the must. A portion of the must is then stored refrigerated while the remainder of the mixture fermentes at a controlled low temperature. The second fermentation takes place in pressurized vessels in the presence of selected yeasts, with the help of which this sparkling wine acquires its soft and long effervescence. In the final step, the wine is bottled and left to ripen directly in the bottle in temperature-controlled warehouses for several more weeks.
