During the month of September the Sauvignon Blanc reaches its perfect ripening point in the province of Valencia. For this reason, the harvest is carried out at night, when the temperatures are cooler. This helps to preserve all the characteristic aromas of this noble variety. To achieve more aromatic intensity, a short period of time is cold-macerated and fermented at a controlled temperature, approximately for 20 days. With these processes, we obtain a white wine 100% Sauvignon Blanc very aromatic and with great fruit character.
