Winemaking
Each variety is fermented separately with an average of 15 days maceration in contact with the skin. The wine is fermented at 28ºC to achieve malolactic fermentation. Finally, it is transferred to a tank where the sediments are naturally decanted for three months. It is then refined with a ten month maturation process in French Allier oak.
