Winemaking
The 2017 viticultural year was characterized by being extremely dry and hot. The evolution of climatic conditions has contributed to an earlier sprouting that has occurred throughout the entire vegetative cycle. The harvest began on August 11, in some white varieties, and then followed with normality in the red varieties until the end of September. The Sauvignon Blanc grapes that made this wine origin come from the border areas of the Douro Demarcated Region. These are areas of high-altitude granite soils which originate wines of greater freshness and minerality. The fermentation occurred through thefermentation off skins process with Sau- vignon Blanc must. It underwent on a process of natural cleaning passages to remove the lees after the alcoholic fer-mentation and then a filtration coursewhich was followed by the bottling.
About manufacturer
Quinta da Pacheca, one of the best known estates in the Douro region, was also one of the first properties to bottle wine under its own label. It is first mentioned in a document dated April 1738, where is it referred as “Pacheca’s”, because it was property of D. Mariana Pacheco Pereira. But it was only in 1903, when Dom José Freire de Serpa Pimentel decided to develop his interest in oenology, that he bought the estate and began to seriously dedicate himself to the risky business of winemaking. Today, a century and many successes later, a brand-new generation of the Serpa Pimentel family is at the head of Quinta da Pacheca: Maria, Catarina and José are the young new faces of this family old company.
