Our Gevrey Chambertin offers a very intense deep garnet robe. Strawberry, blackberry, violet, reseda and rose make up its spontaneous aromas that gradually develop into a bouquet of licorice and leather. The palate expresses a great Burgundy wine. Full and powerful, rich, full-bodied, it asserts itself with a firm structure, tannins that lean toward velvety, expressing a very fine grain. This wine has a solid frame and great longevity.
Beef prime rib, braised lamb, feathered or furred game: it pairs will all these musky types of meat with solid fibers. Some gourmets may still dare to serve it with a fillet of zander or with tuna with red wine sauce. It goes easily with all cow’s-milk cheese with character, especially Epoisses and Chambertin from nearby, or Cîteaux from not too far away.
Story
A dozen kilometers south from Dijon, at the foot of the Lavaux valley, Gevrey-Chambertin spreads its vineyards toward Côtes de Nuits over nearly 140 hectares. The canons of Langres have long watched over these vines, as proof of how far this nectar plunges its roots into the entire history of Burgundy wine.
At between 280 and 380 in altitude, the vines enjoy southeastern and eastern exposure. They are planted in brown lime soils and benefit from marl covered with scree as well as red silk from the plateau. These types of gravel give the wine elegance and finesse, which marl rich in fossilized seashells and clay give it body and firmness. These red wines are entirely made from a single pinot noir variety, also called “pino noirien” in Burgundy.
